the cookie club // lemon raspberry white chocolate cookies

welcome to the first official cookie club post!! so excited.

today i’m sharing one of the brightest, fresh, soft, and delightful cookies i’ve tried — lemon raspberry white chocolate cookies. these are filled with lemon zest, fresh raspberries, and chunks of creamy white chocolate, and they feel like sunshine and sweetness all at once. i can’t wait for you to make them and love them as much as i did!

ingredients
  • 1 cup butter
  • 3/4 cup brown sugar
  • 1/4 cup white sugar
  • 2 tbsp lemon zest
  • 1 egg + 1 egg yolk
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tbsp cornstarch
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1 cup fresh raspberries
  • 1 cup white chocolate chunks

instructions
  1. heat the butter in a pan over medium heat. stir as it melts. after a few minutes, the butter will bubble and then start to foam. once the foam goes away, you’ll have brown, nutty-smelling butter. this takes about 7–10 minutes. pour it into a glass container and freeze for 10 minutes to cool.
  2. preheat your oven to 350°. in a stand mixer, add the cooled browned butter and brown sugar. in a separate small bowl, combine the white sugar and lemon zest, rubbing them together so the lemon oils really come out. add the lemon sugar to the mixer and mix for 4–5 minutes.
  3. add the egg, egg yolk, and vanilla extract — mix until blended.
  4. add the flour, cornstarch, baking powder, salt, and baking soda. mix until just combined.
  5. gently fold in the fresh raspberries and the white chocolate chunks.
  6. using a large cookie scoop, scoop the dough onto a lined cookie sheet (about 4 dough balls at a time). if you want, press a few extra white chocolate pieces on top of each cookie. bake for 10–14 minutes, until the edges start to brown.
  7. let the cookies cool completely before enjoying.

these cookies are bright and cozy at the same time — lemon zest and juicy raspberries with those soft pockets of white chocolate. they’re perfect for a sunny winter day, a spring afternoon, or whenever you need a little happy in your kitchen.
