andddd WE'RE BACK. some cookies are meant for after dinner. these belong beside a cup of coffee.

today’s bake is a coffee cake cookie — soft cinnamon dough, buttery crumble on top, and a light vanilla drizzle to finish. everything you love about classic coffee cake, just in a handheld, golden-edged cookie. sweet, but not too sweet. simple, but never boring.

the kind of cookie that feels like a quiet morning at home.

total time: 40 mins
makes: 12 large cookies

cinnamon dough
1/2 cup butter, softened
1/2 cup vegetable oil
1 cup brown sugar
1 large egg
1 tsp vanilla
2 tsp cinnamon
2 1/2 cups flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt

streusel
1/4 cup butter, softened
1/4 cup brown sugar
1/3–1/2 cup flour
1/2 tsp cinnamon
pinch of salt

icing
1/2 cup powdered sugar
1 tbsp milk
splash of vanilla

let’s make them
preheat oven to 350f.
cream butter, oil, and brown sugar until smooth and fluffy. add egg and vanilla.
mix in flour, cinnamon, baking soda, baking powder, and salt until just combined.
for the streusel, mix all ingredients until crumbly — it should clump, but break apart easily.
scoop dough into large balls. press a small indent on top and fill with streusel.
bake 10–12 minutes until set but soft.
whisk icing ingredients until smooth and drizzle over slightly cooled cookies.
warm. crumbly. made for slow mornings.
