i'm back!! it's been a while since my last cookie club post, but i'm excited to get back into it. i was traveling for almost two weeks & now we're home (maui post coming soon!)
now, some cookies feel fancy. some feel trendy. and then some feel like a cozy saturday morning. today's bake is a waffle cookie - soft, golden, and quietly rich in that brown-sugar way. the edges bake up just right, the centers stay tender, and once they're warm, they're ready for the only toppings that make sense: a small pat of butter and a drizzle of honey. no frosting mountains & no over-the-top extras. just simple goodness. this one leans into comfort - the kind that feels more like breakfast than dessert.
*WAFFLE COOKIES*
prep time: 20 mins
cook time: 12 mins
total time: 32 mins
makes: 9 large cookies
ingredients
1/2 cup salted butter, softened
1/2 cup brown sugar
1/4 cup granulated sugar
1 large egg, room temp
1 tsp vanilla
1 1/3 cups flour
1/2 tsp baking soda
1/2 tsp salt
for topping
a small piece of butter
a drizzle of honey
let's make them
preheat oven to 350f and line baking sheets with parchment.
cream the butter and sugars until smooth.
mix in the egg and vanilla.
add flour, baking soda, and salt — stir until just combined.
scoop into large dough balls and lightly press a waffle pattern on top.
bake 10–12 minutes until edges are set but centers stay soft.
